• 1 cup mush-rooms, sliced
• 1 cup arti-choke hearts, diced
• 1 cup zucchini, diced
• 2 cups spinach, chopped
• 1/4 cup sun-dried tomatoes, chopped
• 1/4 cup Parmesan cheese, grated
• Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the red bell pepper, mush-rooms, arti-choke hearts, and zucchini. Cook for 5 minutes, stirring occasionally.
4. Add the spinach, sun-dried tomatoes, Parmesan cheese, and salt and pepper to taste.
5. Cook for another 5 minutes, stirring occasionally.
6. Add the cooked linguine and mix well.
